Pesto Zoodles

Pesto Zoodles
½ C Spiral Zucchini
½ C Spiral Sweet Potato
½ tsp Pesto
1 tsp olive oil (for the pan)
½ small onion
1 Clove of Fresh minced garlic or Garlic Powder to taste
1 tsp of soft low fat goat cheese

Instructions:
• Heat skillet to medium heat
• Add olive oil
• Add small onion and garlic. Cook until slightly translucent
• Add spiraled zucchini and sweet potato
• Sauté for 5 mins or until preferred doneness of zoodles
• Add Pesto and continue to cook for one minute
• Plate and add 1 tsp of soft low fat goat cheese
