Trying to hit my stride. I’ve been laying awake at night with these ideas about what to do and say here in my little corner of the internet. People asked me what I’d talk about. Honestly my interests are so far ranging I hope you can stick with me through some of the topics that just aren’t for you.
I’ve decided to set a reasonable reading challenge for myself this year. Typically, I read 5 to 8 books a year for work. But I’ve really been missing reading for myself. In light of this I’ve made a list of books I want to get through, and a challenge of 25 books overall this year. I am including Trade Paperbacks in that category too! Including those, I think 25 might be easy to hit. We shall see.
What are you reading now or looking forward to getting to in your reading pile?
Outside of reading, I remain totally enamoured with the Wasteland in Fallout 4. I’ve been playing it off and on for a year and a half. Other games have been in there as well, Bioshock 1, 2 and Infinite, Life is Strange, Stardew Valley and Skyrim. But I keep coming back to Fallout 4. I enjoy the story (which I am still slowly working my way through) But I also enjoy the world and the Post Nuclear Event Sims aspect of it. I’ve debated trying New Vegas, but I can’t pull myself away.
I did reflect a bit on why this blog had to be created. There are a few reasons. One is that I really dislike the interactions on Facebook. I really felt like this could offer a different type of medium for me to just be me, and not get angry every time someone decides to be a troll on a status update. I also wanted something to keep my prone to Seasonal Affective Disorder self, focused. I find winter is the worst to keep me focused. This season I have ramped things up to keep me active both mentally and physically. I’m hoping this approach works. I’m sure you will hear all about it!
Part of my focused efforts this winter has been meal planning. For the past three weeks we have been meal planning on the weekends for the week ahead. We have only eaten out twice in three weeks! Brunches on a Saturdays! This is huge for us! But more importantly because of the meal planning, I’ve been hitting weight loss targets and my husband hasn’t needed to buy his lunch because he has leftovers from dinners! I know it seems so small but really has made a difference. My biggest struggle in the planning right now is snacks. I can’t buy fruit too far in advance because it will spoil. I find I still pop over to the grocery store a few times a week for apples, bananas etc.
Do you meal plan? Do you have any websites that you recommend for it?
I tend to go to Skinny Taste and Drizzle Me Skinny for recipe ideas. Both have some excellent ones! If you aren’t watching what you eat, you can always go to Pinterest and look for the most buttery, cheesy thing you can find. (Let’s be honest, I still look for those sometimes and make them! A girl has gotta eat!)

½ C Spiral Zucchini
½ C Spiral Sweet Potato
½ tsp Pesto
1 tsp olive oil (for the pan)
½ small onion
1 Clove of Fresh minced garlic or Garlic Powder to taste
1 tsp of soft low fat goat cheese
• Heat skillet to medium heat
• Add olive oil
• Add small onion and garlic. Cook until slightly translucent
• Add spiraled zucchini and sweet potato
• Sauté for 5 mins or until preferred doneness of zoodles
• Add Pesto and continue to cook for one minute
• Plate and add 1 tsp of soft low fat goat cheese
